Happy Birthday Bro!
It's my baby brother's birthday and I made maple carrot cupcakes with cream cheese frosting for him. I think I finally got the consistency right for the frosting so that it didn't ooze off the cakes. But why is it so glossy?!
I substituted unsweetened apple sauce for the vegetable oil called for in the cake batter to make up for all the sugar and butter for the frosting. I turned out well but I know I can do better. I brought half the batch to work to share. People seemed to like them since they disappeared an hour after I left them in the break room. Then again, they'd eat chocolate covered dirt.
